Happy March! Here’s to another month of delicious wine and food as we explore more and more of what 2026 has in store. We’re currently coming off a month of some very inspiring tastings and we’re excited to bring some new names to our website and your doorstep.
This month, we’ve got a Petit Chablis from Sebastien Christophe who continues to elevate our excitement about the 2023 vintage in Burgundy. A bottle of Sauvignon Blanc from Pierre Menard – the under-the-radar Loire producer you need to know about. Last, is one of the most charming bottles of Sangiovese we come across vintage to vintage from Caparsa in Radda in Chianti.

2023 Christophe et Fils, Petit Chablis
Sebastien’s youngest vines planted on Portlandian soils aged 7-8 months in stainless steel. His parcels of Petit Chablis are located above and to the north of the premier cru Montee de Tonnerre.
Sebastien Christophe started with a tiny 0.6-hectare parcel of Petit Chablis in 1999 and has since grown his winery into a well-rounded domaine with parcels spanning the entire quality pyramid, including holdings in Preuses, Blanchot, Fourchaume, Montee de Tonnerre, and more. The wines are the essence of Chablis in their understated deliciousness and subtlety.
Christophe et Fils
Sebastien Christophe is a shining example of what can still be done in just a single generation. Originally from a cereal farming family in the Fye Valley, Sebastien attended winemaking school in Beaune before returning home to Chablis to realize his dream . He was gifted a tiny, half-hectare plot of Petit Chablis from his family and produced his first wines in 1999.
Since then, he has built up his domaine into a sizable winery with holdings at each quality level in Chablis, including the Premier Cru holdings in Montee de Tonnerre, Mont de Milieu, and Fourchaume, along with Grand Cru parcels in Blanchot and Preuses. His Chablis Village parcel is located between Grand Cru Blanchot and 1er Cru Montee de Tonnerre and is among the best we taste each year.
Sebastien prefers stainless steel for most of his wines and less than 10% see any oak at all, as he prefers to highlight the terroir of each individual plot. He will often even vinify the same cuvee in several different vats separated by subsoil before combining them to his liking. The wines from Christophe et Fils are rare in France as the majority of the wines are exported, save for a few top restaurants in Paris.

2023 Pierre Menard, Laika, Val de Loire
Old vines of Sauvignon Blanc coming from le Clos de la Roche (no affiliation with the Burgundian Grand Cru) in Faye d’Anjou. Much like Pierre’s Chenin, this bottling is chiseled and complex, fitting in nicely with his other whites.
Pierre Menard seems poised to join the pantheon of legendary producers working with Chenin Blanc on the complex array of soils in Anjou. Despite being located squarely in sweet wine country, Pierre is making fascinating and delicious dry bottlings (in addition to one sweet wine) that rival some of the top wines being made with the grape today. These wines are highly recommended for lovers of Richard Leroy, Mark Angeli, and Thomas Batardiere.
Pierre Menard
Pierre Menard comes from winemaking stock in Faye d'Anjou, but the grapes grown by his parents were sold off to a local cooperative. After attending winemaking school in Angers and staging around the world (most notably at Chateau Latour), Pierre returned home and convinced his parents to let him start a small project with some of their old-vine plots of Chenin Blanc in the Quarts de Noels and Clos des Mailles. 2013 was the first vintage produced, and Pierre has slowly increased his production since.
Pierre's vision is centered around producing dry, single-parcel Chenin Blanc from old vines. The schist-dominated soils of Anjou are among the most diverse and unique in the Loire, and Pierre thinks the terroir of each of his vineyards is expressed best when fermented totally dry. He also works with Cabernet Franc and has acquired some old-vine plots of Sauvignon Blanc from which he makes a delicious bottling named Laika.
In the cellar, things are quite minimalist. Pierre prefers slow, cold fermentations in used barrels, which usually rest on lees before bottling 10 months later. The beautiful labels are also of Pierre's own creation, as he is an artisan and musician in addition to a winemaker. This is a small winery of under five hectares, and the wines are sure to increase in price and recognition in the near future.

An easy-going, cheerful Sangiovese matured in cement-lined tanks. Maceration and aging is reduced to preserve the wine’s fresh and fruity qualities.
Caparsa occupies a unique intersection of traditional winemaking and progressive work in the vineyards, leading to some of the most terroir-driven and personal wines we’ve come across in Tuscany. Located in Radda in Chianti, Paolo Cianferoni and his family are among the most progressive farmers in a region where being certified organic and promoting biodiversity in your vineyards is far from the norm. The results are wines with soul and intention that are sure to be among the first emptied.
Caparsa
Reginaldo Cianferoni, a professor at the University of Florence, purchased the property in Radda in Chianti in 1965 and began planting vineyards. Already on-site was an ancient cellar dating back to the 17th century. His son Paolo took over in 1982 and runs the domaine today with support from his entire family. Together, they manage the vineyards, cellar work, sales, and logistics.
Paolo conducted an extensive replanting project completed in 1999, and has overseen a total organic conversion in the cellar and the vineyard. Sangiovese is king in Chianti, and the Cianferoni family makes a variety of bottlings. In addition to Chianti Classico and Chianti Classico Riserva, they produce a tasty rosato under the IGT designation and a small selection of their best Sangiovese vines dedicated to Paolo’s partner called Mimma.
In the cellar, spontaneous fermentations are carried out in cement-lined tanks, and some of the entry bottlings remain in concrete, while prestige bottlings are moved to oak. Uniquely, the size of the oak vessels varies per bottling: 1800L barrels are used for the Chianti Classico Riserva Caparsino, whereas the Doccio a Matteo, arguably the domaine’s top wine, is aged in 1000L or 500L barrels from Allier, Slavonia, or the United States. Older vintages of thier Chianti Classico Riserva Doccio a Matteo are highly recommended.
