SOIL Sandy, calcareous soil with marls and sandstone
FERMENTATION Grapes kept one night after harvest prior to pressing, which is done gently in traditional basket press. Native yeast fermentation for Arneis in cooler part of cellar to maintain aromatic delicacy. The skins are kept for 3 days of maceration in 15-20 hL stainless steel vats. Kept on lees for 4-5 months, malo-lactic conversion is blocked.
AGING Kept in stainless for 6 months, prior to 1 year's aging in bottle at the winery before release.
