Sourced from Pascal's best plots within his home village of Vertus, Coeur de Terroir is aged ten years on the lees prior to release. With a dosage of 3.5g/L and the extended aging, you can expect a brilliant verve of Chardonnay's fine-beaded acidity and softness - not to mention wild complexity!

Pascal's first vintage at the helm of his family's estate was in 1995; by 2004, Pascal had created his own eponymous domaine, which today is known for being one of the finest sources of purity in the Cote des Blancs.

Pascal Doquet

After starting with his family in 1982 at the then-named Doquet-Jeanmaire, Pascal Doquet's career started very humbly and without fanfare. After he took hold of the reins of the family's vineyards, Pascal waited nearly ten more years before attaching his own name to the vineyards, signifying his own readiness and that of his now fully organic vine rows.

Based in Vertus but with holdings in Mesnil-sur-Oger and Le Mont Aimé, Pascal is considered to be one of the most consistently excellent producers of Chardonnay. Stylistically, the wines are fine but expansive, full of character that showcases both his viticultural nous and his deft hand in the cellar. Reserve wines are used often in the non-vintage cuvees, and extended aging for the millesime (single-vintage) wines provides the house signature of soft mousse and ample fruit & spice character.
