2024 Roc Breia, Macon-Villages, Chardonnay
THE VINEYARD Bray, Macon - one of the coolest regions of Macon at 350m altitude, a single, contiguous 10-hectare plot. Chardonnay yields are approximately 35-40 hL/ha.
VINE AGE 40-70 years
SOIL Limestone with some gray marl
VINIFICATION Harvested early but at full maturity as whole clusters, the bunches are crushed before pressing. A long, slow but extended pressing takes place to maximize extraction and generate ample solids in the must. Settled into stainless tank, the juice is transferred to barrels for fermentation with fine lees spread evenly throughout. Barrels are 350 & 456L, 1-3 years' age (no new oak). Malo-lactic allowed. A small amount of sulfur is added in barrel after 4-6 months, and 1-2 adjustments at bottling - total is 30-35 mg/L of SO2.
AGING 12 months in 350L casks in the underground cellar; after the 12 months, the barrels are racked - along with the lees - into stainless steel tanks where they age an additional 3-4 months to settle, before bottling via gravity without filtering or fining.
