2024 Roc Breia, Bourgogne, Rouge
THE VINEYARD Bray, Macon - one of the coolest regions of Macon at 350m altitude, a single, contiguous 10-hectare plot. Pinot Noir yields are approximately 25 hL/ha.
VINE AGE 40-70 years
SOIL Marl & red limestone
VINIFICATION Carefully sorted and de-stemmed, the grapes are placed into stainless steel tanks for fermentation, which begins spontaneously (no unnatural temperature elevation). After fermentation, the wine is racked off the skins, which are then pressed gently to not extract any harsh tannins. After settling, the juice is combined with press juice, and transferred to barrels.
AGING Aged 12 months in 228L casks ranging 1-3 years' age (no new oak). Malo-lactic allowed. Transferred to tank for 3-4 months to settle, before bottling without filtering or fining. A small amount of sulfur is added in barrel after 6-8 months, and 1-2 adjustments at bottling - total is 20-25 mg/L of SO2.
