All the reds show different from each other, all with marked personality. The 2023 Kauten is a little more Mediterranean, open and oxidative. It was produced with the younger vines in Olite at 410 meters above sea level. It fermented with indigenous yeasts, part with foot-trodden clusters in stainless steel and matured in used French oak barrels for seven months. None of the wines show any aromatic impact from the oak, all showing their character without makeup. This shows some ripeness at 14% alcohol, keeping the balance with a pH of 3.32 and 6.5 grams of acidity. 3,096 bottles produced. It was bottled in February 2025.
