The 2023 Matsanko is very spicy, with pungent notes of aniseed and fennel providing freshness. Produced with 70% Garnacha from Olite and 30% Tempranillo from Dicastillo, it fermented with full clusters and indigenous yeasts and matured in used French oak barrels for seven months. It has contained ripeness, 13.5% alcohol, a pH of 3.28 and 6.4 grams of acidity. It has good stuffing and abundant, fine-grained, chalky tannins. This is a step up in precision and freshness. 3,633 bottles produced. It was bottled in March 2025.
