In terms of the vineyard frame of mind, I slot Gosset close to Feneuil, with the insane dedication and biodiversity that have created vineyards teeming with life. He does make the occasional sparkling wine, too, but the Coteaux are some we have received countless requests for!

Paul Gosset

A firm believer in the power of a vineyard without human intervention, Paul Gosset is the second generation of his family's winemaking history. In the village of Aÿ, since his first vintage in 2016, Paul's production has caught the eye of keen - lucky! - drinkers across parts of the globe. With wild amounts of biodiversity through the vineyards, the vines have plenty to fight for, and the resulting wines are pure, concentrated yet light to the touch.

In the winery, wines are allowed to ferment with native yeasts, and the elevage in barrel is watched carefully to mind for texture and proper structure. Elegance, however un-impacted by human hands as wine can be, is the first word here.
