Despite a family history in Champagne dating back to the 19th century, the young Cyril Bonnet has leapt to the forefront of inspiring recoltant-manipulants that we can’t stop drinking. Since joining his father in 2013, he has helped oversee a conversion to organic farming and is experimenting with things like phytotherapy in the vineyard, variable levels of dosage, and sulfur –– all to great success.
The Bonnet family has been making Champagne in the village of Chamery since 1862. The current iteration of the domaine was established in 1956 with the union of Andre Bonnet and Monique Ponsot with several plots in the villages of Chamery, Vrigny and Coulommes la Montagne.
After expanding holdings into the Grand Cru village of Verzenay and building out a new cellar, Thierry Bonnet was joined by his son Cyril in 2013, who has been a powerful force for change overseeing the conversion of all vineyards to organic farming. Cyril’s experimental and terroir-inflected approach has pushed the winery to the forefront of cutting-edge producers in Champagne.
The Cuvee Perpetuelle bottlings are a great introduction to the style, released in both Extra Brut and Non Dose. Additionally, Cyril has introduced a lineup of fully additive free Champagnes under the name Seconde Nature, and the domaine releases vintage bottlings that see 5-6 years of aging in bottle before release.
