CELLAR ACCESS - AUGUST!!
2025 is just flying by and we’re back with another trio of bottles that we’ve been hunting for all month long. With a festive July behind us, we’re all looking forward to a relaxing August before things kick back into high gear in the fall.
This month, we’ve got a bottle of Champagne from the dynamic talent Cyril Bonnet who’s boldly leading his family’s winery in Chamery in new directions. There’s a bottle of Chenin Blanc from Domaine Aux Moines – working in your favorite sommelier’s favorite appellation – and a bottle of Pinot Noir from the outskirts of Burgundy made by the immensely talented Raphaelle Guyot.

NV Bonnet-Ponson, Cuvee Perpetuelle Non Dose Premier Cru, Champagne
NV Bonnet-Ponson, Cuvee Perpetuelle Non Dose Premier Cru, Champagne
The Cuvee Perpetuelle is a blend of 40% Pinot Noir, 30% Chardonnay, and 30% Meunier from the family holdings from 35 plots in the Petite Montagne. A snappy, mineral and focused Champagne bottled Brut Nature.
Despite a family history in Champagne dating back to the 19th century, the young Cyril Bonnet has leapt to the forefront of inspiring recoltant-manipulants that we can’t stop drinking. Since joining his father in 2013, he has helped oversee a conversion to organic farming and is experimenting with things like phytotherapy in the vineyard, variable levels of dosage, and sulfur –– all to great success.
Bonnet-Ponson
The Bonnet family has been making Champagne in the village of Chamery since 1862. The current iteration of the domaine was established in 1956 with the union of Andre Bonnet and Monique Ponsot with several plots in the villages of Chamery, Vrigny and Coulommes la Montagne.
After expanding holdings into the Grand Cru village of Verzenay and building out a new cellar, Thierry Bonnet was joined by his son Cyril in 2013, who has been a powerful force for change overseeing the conversion of all vineyards to organic farming. Cyril’s experimental and terroir-inflected approach has pushed the winery to the forefront of cutting-edge producers in Champagne.
The Cuvee Perpetuelle bottlings are a great introduction to the style, released in both Extra Brut and Non Dose. Additionally, Cyril has introduced a lineup of fully additive free Champagnes under the name Seconde Nature, and the domaine releases vintage bottlings that see 5-6 years of aging in bottle before release.

2022 Domaine Aux Moines, Savennieres, Roche aux Moines
2022 Domaine Aux Moines, Savennieres, Roche aux Moines
From 9.6 hectares grown along the Loire river that are harvested over several passes. The domaine wine is fermented in tank before 18 months of elevage in a combination of tank and barrel. Cerebral, Elusive, and interesting to follow over a few hours open.
Perched atop the historic Roche Aux Moines in Savennieres is one of the great addresses for cerebral Chenin Blanc in today’s Loire. Following in the footsteps of her mother Monique, Tessa Laroche is making gastronomic wines that highlight one of the Loire’s most unique and historic appellations.
Domaine Aux Moines
In 1981, the Laroche family acquired Domaine Aux Moines – originally occupied by monks from the Abbey Saint-Nicolas in Angers – and have situated the winery as one of the key players in this tiny but mighty portion of the Anjou-Saumur region. With a unique history dating back to the 12th century, dry Chenin from the commune of Savennieres is one of the Loire Valley’s crown jewels.
Domaine Aux Moines owns 12 of the 22 hectares that make up the Roche Aux Moines appellation and the vines surround their magnificent property overlooking the Loire. For context, the infamous biodynamic philosopher and winemaker Nicholas Joly and his Coulee de Serrant are right next door.
The domaine releases just two wines made exclusively from Chenin Blanc: the estate bottling, on which you’ll find the beautiful estate property and a cuvee of young vines released under the name Le Berceau des Fees. Harvest occurs over 5 or 6 passes and the estate wine is aged for 18 months before being bottled. Keep an eye out for library releases to see Savennieres at its peak.

2022 Raphaelle Guyot, Les Robinettes, Yonne
2022 Raphaelle Guyot, Les Robinettes, Yonne
From a single limestone hillside in Yonne planted in the early 2000s. 70% whole cluster inclusion with a 20-day maceration before 10 months in neutral oak. Aromatic, mineral and deep, bringing to mind the wines of Didier Fornerol.
For those who say there’s no value to be had in Burgundy, we say you haven’t looked hard enough. After a few work placements in the Loire Valley and a stint with Thibault Ligair-Belair, Raphaelle Guyot returned to Yonne – sandwiched between Sancerre and Chablis – to launch her own project and made quick work replanting 10 hectares of vines in Puisaye Forterre. Her wines are youthful, energetic, and she’s quickly creating an identity for her region.
Raphaelle Guyot
Even seasoned collectors and wine professionals might remark “Where, exactly?” when talking about Raphaelle Guyot and her Vin de pays de l’Yonne. After studying in Beaune and working at some notable wineries in the Loire and Burgundy (including a stint with Thibault Liger-Belair), Raphaelle returned home to Puisaye Forterre to start her own winery focused on rehabilitating fallow vineyards in the area.
The vineyards that Raphaelle works are truly on the outskirts of western Burgundy located between Sancerre and Chablis. In terms of appellations, think Cotes d’Auxerre, Irancy, Bourgogne Aligote, Saint Bris and, of course,Vin de pays de l’Yonne.
In terms of winemaking, Guyot prefers working with a majority of stems for the reds (usually around 70%) and minimal intervention throughout the vinification process, with often just a bit of sulfur added to stabilize the wines. The whites are subtle and elegant and the reds are vibrant and charged with personality and drinkability.
