Produced entirely from the 2016 vintage and disgorged with a dosage of three grams per liter, Lahaye’s NV Rosé de Macération underwent a three-day maceration before pressing, followed by maturation in barrel and amphora. A success in a year fraught with mildew pressure, this wine emerges with vivid aromas of redcurrant, cranberry, pink grapefruit and spice. Medium- to full-bodied, it is flavorful yet racy, with bright acidity and bitter, structuring phenolics that express themselves on the long, mineral finish.

(100% saignee pinot noir; L33102011): Dark pink. Intensely perfumed aromas of raspberry, tangerine and fresh rose are lifted by notes of white pepper and smoky minerals. Suave, silky and focused, showing fresh red berry flavors and an undercurrent of minerality. Finishes on a dried cherry note, with impressive length and resonating smokiness. Serve this full-flavored pink Champagne with a roasted bird or pork dish.
