The Collets own 10 hectares on the Vaillons hill split between 15 different vineyards, with a majority of the vines being planted in 1972. This wine is fermented in 95% stainless steel and 5% oak. Elevage lasts for 14 months in 1/3 small barrels, 1/3 in old foudre, and 1/3 in stainless steel.

Romain Collet took over the family estate in 2008 at the young age of 21. During his tenure, he has pushed his traditional family winery forward by implementing organic and biodynamic practices in their enviable holdings throughout Chablis. The results are a pristine and distinctive set of wines that impress from Petit-Chablis all the way to their parcels in Le Clos and Valmur. Winemaking for each bottling is individualized to enhance the personality of each vineyard, leading to a complex range of wines representing their corresponding terroir like few others.

Domaine Jean Collet & Fils

The Collet family has been involved in cultivating grapes in Chablis since 1792. Jean Collet was the first line in the family to begin bottling wine from the family vines in 1954 and helped to promote sales for Chablis both in France and in the export market.

Two generations later, Romain Collet has taken several instrumental steps to improve the quality of wines being made. After serious nerve damage prematurely ended the career of his father, Romain was thrust into the mix during the late aughts at just 21 years of age.

Romain is the beneficiary of his family’s history in the region and their holdings of old vines … the Collets are the principle holders of the Vaillons hill. During his time as the head of the family business, the holdings in Valmur, Les Clos, Montee de Tonnerre, Vaillons and more have all been converted to organics. Additionally, Romain takes a varied approach to applying oak or stainless steel to achieve the most terroir-driven results possible. For example, their Montmains bottling sees no oak during elevage whereas Montee de Tonnerre is aged entirely in oak. You’ll be hard-pressed to find more emblematic wines coming out of the region.
