The 2020 Bourgogne Aligoté Bas de Ees takes a little time to settle in the glass, but it is worth waiting for. Quite an attractive bouquet, it offers more resinous scents than obvious fruit, elements of lanolin and beeswax. The palate is actually better than the aromatics, fresh with a crisp line of acidity and touches of grapefruit, orange rind, and bitter lemon. It feels cohesive, articulating the variety with some panache. This bottle was actually ordered at Maison de Colombier-Saugnieu, so I got the chance to see it evolve over a couple of hours. Definitely worth hunting down.
