The Les Ongles vineyard comprises a 2-hectare plot primarily composed of schist, with vines averaging around 30 years old. The wine undergoes barrel fermentation and rests on the fine lees for a year. A warm vintage with low yields resulted in premium fruit exhibiting excellent harmony.

Stephane started in the late 80s with the legendary Mark Angeli of Ferme de la Sansonnière, under whom he learned a great deal about creating outstanding dry wines from what was once sweet wine territory. Taking that same level of attention needed for great sweet wines - carefully monitoring the ripeness and the grapes' health into the latter part of the growing season where you'd see botrytis forming - and applying it to dense dry wines is a lesson in patience and effort. These are among the most treasured whites of France, with compelling density, complexity and length, not to mention ageability.

Stephane created his own domaine in 2000, compiling what is now 3 hectares of mostly old vines, some in excess of 100 years of age. From these he creates three different cuvees - Coqueries from the youngest vineyard, which produces a bright, more saline style; Les Ongles from an average of 30+ year-old vines on schist soils; finally, Les Nourissons, from vines planted in 1910 that Bernaudeau purchased from legendary producer Eric Calcutt who had carefully tended the vineyard for decades.
