Emilien meticulously tends to just over 2 hectares of biodynamically farmed vineyards. Totum incorporates Chardonnay and Petit Meslier grapes sourced from various plots he cultivates. Following fermentation in barrels for approximately a year, the wine undergoes a second fermentation in the bottle.
