Concocted of about 60% Chardonnay, 35% Pinot Blanc and 5% Arbane, this is part of the amphora duo. From 20-year old vines on rootstock that was specially selected to be low-vigor (shorter shoots, low-yielding), planted into kimmeridgian soils. Dominique uses her native yeast strains for both the primary and secondary fermentations, and the wine will age in amphora for 11 months. The final wine receives zero dosage.
The white varietals in the Aube, especially those crafted by Dominique are often quite linear, which is to say they are focused and not opulent. The amphora here does lend a softness and a bit more texture, and you should expect citrus curd complemented by that bright salinity.
