The 2018 Savagnin En Billat shows a cloudy color and a super austere nose, coming through as shy and closed with pungent acidity and with marked saltiness. This is just too young and austere at the moment, but it should develop nicely in bottle. It eventually opened up in the glass, revealing varietal notes, hints of peach, apricot and mandarin peel. This is the best Savagnin from En Billat so far.

The 2018 Côtes du Jura Savagnin En Billat unwinds with ripe yellow apple, a slice of white peach and minty nuances. Perfumed and complex, it hits the palate with gripping intensity underpinned by a firm acidic core. Notes of wet stone add a mineral component. I’d give it at least another year in a cool cellar before pulling the cork.
