The 2018 Chablis "L’Humeur du Temps," which comes from four parcels that surround the home village of Courgis, is matured in foudres, vat and barrels. It has a pretty wax resin, white chocolate and grilled almond nose that gains intensity with aeration. The well-balanced palate features orange peel and mandarin on the entry, modest depth, a fine bead of acidity and a linear, focused, marmalade-tinged finish that delivers the acidity to urge another sip. Superb.
