Guiborat’s 2017 Blanc de Blancs De Caurés à Montaigu, produced from two lieux-dits in Chouilly planted with massal selection in 1946 and 1970, unites the taut musculature of the northwest-facing Les Caurés with the richness and amplitude of the southeast-facing Montaigu (77% of the blend). Richard Fouquet recalls the rain that arrived two weeks before harvest, combined with heat that delivered almost tropical weather, causing acidity levels to drop. Vinified without malolactic fermentation and sourced from top sites, its racy spine of acidity, however, belies the vintage. Soaring from the glass with aromas of pear, lemon zest and pealed almonds, it is medium-bodied and bright on the palate, concluding with a long, chalky finish. In the context of the vintage, it delivers considerable purity. It was disgorged in December 2022 with a dosage of 1.5 grams per liter.
