For those in the know, the beautiful squat bottles coming from Azienda Agricola COS in Vittoria are soulful wines with endless personality, character, and class. The trio of friends behind COS make a wide variety of bottlings that represent the terroir and grapes of Sicily while also incorporating modern and ancestral techniques in the winery.

Azienda Agricola Cos

In 1980, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano formed one of the seminal Sicilian wineries, named Azienda Agricola COS for the first letter of each of their last names. Their reputation in Vittoria for working with the local varieties of Nero d'Avola and Frappato, in addition to their work with biodynamics and progressive techniques in the winery, is among the best on the island.

Elevage in the winery can differ quite a bit from wine to wine, as Giusto Occhipinti (Arianna Occhipinti’s uncle) spent many of the early years experimenting with different means of fermentation and aging. In addition to neutral casks, they often utilize concrete tanks and even 440-liter clay amphorae.

Their Cerasuolo di Vittoria—which differs quite a bit from the pale, quaffable Cerasuolos produced in Abruzzo—is one of the best produced in the region. They additionally make a version aged in amphorae, and a single-vineyard Cerasuolo di Vittoria Classico from a site called Della Fontane, which is one of the region’s most compelling wines.

Black currants are offset by a twang of sour citrus, sage, dusty rose and hints of animal musk as the 2017 Nero d'Avola Contrada opens up in the glass. This is deeply textural with a pleasant inner sweetness, as masses of tart red and black fruits saturate deeply, tinged with saline-mineral notes and grippy tannins that mount toward the close. It’s youthfully structured yet leaves the mouth watering, as residual acids and hints of spiced orange linger incredibly long. The 2017 closes in upon itself with time in the glass, and it will require a few more years of cellaring to show its best; but it will be worth the wait. The Contrada is a selection from some of the oldest parcels of Nero d’Avola in the Bastonaca area of Vittoria. It’s refined for 24 months in large Slavonian oak botti.
