They made a mistake, and not a single bottle of the 2014 Château Chalon remains in their cellars. But he always keeps at least one barrel of each vintage, to see how the wine ages and how it develops with a longer élevage. This still had a thin veil of yeasts, which was uneven and broken in some parts. 2014 was a year of higher acidity, and the wine has more freshness. It has purity and elegance and comes through as a little lighter but with the pungent flavors of green walnuts, curry, celery and morels and the effervescent mineral freshness from the Chalon soils.
