Since acquiring his domaine in Chateauneuf-du-Pape in 1993, Stanislas Wallut has been challenging the status quo. When he achieved biodynamic certification in 1998, he was one of the few in the world to hold the designation. Freshness is always at the forefront of Stanislas’ winemaking, and everything done in the cellar works to carry out his less extracted and aromatic vision of Chateauneuf-du-Pape.
Stanislas Wallut purchased Domaine de Villeneuve in 1993 and made quick work of getting his vineyards prepped for organic and biodynamic certification. He owns 12 hectares with half of his vineyards planted within the northern part of the Chateauneuf-du-Pape appellation in the lieu-dit Palestor, and half are adjacent to the AOP but classified as Cotes-du-Rhone.
The winery is surrounded by his holdings in Chateauneuf, which primarily consist of old vines ranging from 60 to 100 years of age. All the vineyards are co-planted with Grenache (about 70%) leading a majority of the plantings. Stanislas prefers shorter macerations with long elevage in concrete tanks to preserve freshness and energy while allowing his wines to develop in a more neutral vessel. Macerations are gentle and you won’t find a single barrel in the entire winery.
Additionally, Stanislas’ Cotes-du-Rhone vineyards are planted right across the boundary of the Chateauneuf-du-Pape appellation and are planted to the same varieties and terroir as his classified vineyards right across the boundary. Stanislas is boldly charging ahead with a pure and unique vision of Chateauneuf. The results are both youthful and soulful with one foot placed in the old vines of Chateauneuf and one foot placed in the world of modern winemaking.
