From nearly 1 hectare of Cabernet Franc spread over multiple plots planted in the 1970s & 80s, some with clay-limestone and some with primarily limestone soils, farmed biodynamically. Macerated for 2-4 weeks before aging up to one year in neutral barrels.

As we've seen all across wine's landscape, the youth movement is like nothing ever before, with heaps and heaps of well-schooled and experienced young, aspiring winemakers either succeeding their elders or beginning their own label. Such is the case with Aurelien Revillot, a native Burgundian who found himself a position in Bourgueil, home to perhaps the most Burgundian examples of Cabernet Franc the world over.

Aurelien Revillot

Revillot followed stages in Burgundy (including at **cough** DRC), Languedoc, Oregon and South Africa by taking a gig at Domaine de Chevalerie in Bourgueil, assisting both in the vineyards and the cellar. By 2012, he had the opportunity to take on a small patch of vines of his own from a plot neighboring the vines of Chevalerie. Now with 7 plots across 4 vineyards in Bourgueil, Revillot's wines reflect his comfort and knowledge of his land. 

In contrast to the Loire reds I first came to know, the 2020 Bourgueil Les Hauts was brilliantly clean, complex and perfectly balanced with ripe red fruits and a gorgeous hint of a Japanese green peppercorn spice. As it opened throughout the night, some salty, gravelly mineral essence started to poke through, elevating the palate even more. Knowing now that it was fully de-stemmed makes sense, as it wasn't overly green or sharp; instead, a plush, delightfully friendly and elegant example of what is quickly becoming my favorite appellation in the Loire.
